In Praise of Marinades

A marinade of only fifteen minutes will enhance the flavor of most meat, and a longer marinating time, of course, produces more depth of flavor. Large portions require more marinating time than smaller portions and marinating the meat for one day or overnight produces the best flavor results. Basting the meat with the marinade while cooking further enhances the flavor to the meat.

S easoned Boneless Pork Sirloin Chops

With the new emphasis on lean pork as an alternative to higher-fat-content beef, new cuts are appearing in the meat section at the supermarket. Pork sirloin chops require no trimming and are very lean. Broiling to medium (the timing in this recipe reflects this) produced excellent, tender, and juicy chops. Broiling to well done, however, produced a rather tough and dry piece of meat. Pork requires less cooking time because it’s lower in fat and has low water content. This recipe also highlights Pickapeppa sauce, which is sweeter, thicker, and hotter than Worcestershire sauce. If you like Worcestershire, try Pickapeppa, which is available in most supermarkets .

Seasoning mixture :

½ teaspoon ground cumin

¼ teaspoon turmeric

Pinch of ground cardamom

Pinch of grated nutmeg

1 teaspoon vegetable oil

1 teaspoon Pickapeppa sauce
